Blog 75 Basil & Lemon oil Pesto

Saturday I was so frustrated. I searched everywhere for a gluten free and dairy free pesto.
Earlier in the week I had found myself at Whole Foods and discovered a new brand of Cauliflower Pizza, new to me anyway, which I decided must be tried. So when I went to have pizza on Friday I discovered the pesto that I thought was in the fridge... was not.  Saturday I went to find gluten and dairy free basil pesto however, I could not find an appropriate basil pesto at any grocery store. I went to every one in town and all of them had Basil Pesto, some were even gluten free, but all of them had cheese. So I decided to make my own. 

Living gluten and dairy free is not always easy. But necessary. At least for me. I do not have an allergy like some to gluten but an extreme sensitivity to the whole wheat plant and to all dairy except Water Buffalo milk. I do have a latex allergy and it crosses into plant products. Some plants are more reactive than others. Wheat is a bad one, one that causes swelling in the body, joint pain, digestive upset, brain fog and more.  


I was really looking forward to having pizza, so I looked at the ingredients on the bottles and created my own recipe. You may be asking why not just use a tomato - sauce or pesto? Latex, tomatoes are latex. Tomatoes also produce lectins that are hard to digest for everyone. Lectins are found in the skin and seeds of tomatoes. Roma tomatoes were bread to create a tomato that had less lectins and therefore make it more edible. Roma tomatoes are still however not in my diet. Basil Pesto or nothing, and who wants no sauce on their pizza???


Basil & Spinach Pesto with Basil and Lemon Essential oil
 
Ingredients:
1 Bunch fresh Basil
1/2 Cup Fresh Spinach or 3/4 cup frozen chopped
2 TBS Roasted Sunflower Seeds (not fried)
1 Clove Garlic minced
1 cm Fresh Ginger diced (clean skin off by scraping with a spoon)
3 TBS Grapeseed Oil
1 TBS Pure Water
 1/8th tsp Sea Salt (or to taste)
1 Drop Lemon Essential Oil
1 Drop Basil Essential Oil

I used a Magic Bullet to make my pesto. It worked very well. 

Place all ingredients, except essential oils, into the magic bullet or food processor.
Create a nice green paste, then move to a glass prep dish or jar.
Add essential oils and enjoy!!! Makes 1 cup of Pesto.
